What a journey it has been so far, we started Po Campo BBQ-food trailer back in 2017. At the time I had been working in the oilfield for 10 years, I never really enjoyed what I did for a living, and once we got married and started a family the long hitches away from home made me really feel like I was not getting the most out of my life by doing something only for the money. So Po Campo BBQ the food trailer was created as an avenue to try and create something to where I would enjoy what I do for a living and let me be home as well. We opened up the trailer in the summer of 2017, and ran it through the end of the year. We knew we were onto something, but the finances simply wouldn't let us try and keep going through what looked like to be a slower winter season, since we had put everything we had into started the trailer up. So I took my old job back in the oilfield, and in 2018 we ran the trailer whenever I was home, and closed when I went back to work. We knew we were straddling both worlds, and were wondering which way we should go. Opportunity came the end of 2018, when someone offered to buy the lot we parked our trailer on. So our decision was to either sell it and make our money back and return to work, or we sell it and could buy a building in Hico we could afford and fix it up and go all in yet again. The decision ultimately was an easy one, I think God constantly for a wife that continues to back me no matter how many times I choose to jump all into something. In 2019 we opened up Po Campo BBQ, and as of this time (2021) we have been there closing in on 2 years! We have now seen pandemics, meat shortages, food shortages, freezing storms, political turmoil, and not to mention the basic problems all restaurants face in their first couples years of trying to grow your business to a sustainable level. However, our un-wavering commitment to make this work will prevail over all things! We strive to make the very best BBQ we can, and we believe it show's in our food.
